Blood Orange Salad with Herb Dressing


Ingredients:

For the herb dressing:

- Small handful cilantro

- Small handful mint

- Small handful flat leaf parsley

- Juice of 1 lime

- 1 Tb honey

- 1 Tb apple cider vinegar

- ¼ ts chili powder

- 4 Tb olive oil


For the salad:

- 2 blood oranges

- 1 head red leaf butter lettuce

- ¼ cup toasted slivered almonds


Instructions

1. Add dressing ingredients through chili powder to a blender and whizz while slowly drizzling in olive oil. Salt and pepper to taste.

2. Supreme blood oranges. Add red leaf lettuce, orange segments, and almonds to a large bowl. Drizzle with dressing and serve immediately.
