Soba Salad with Miso Tahini Dressing


Ingredients (serves 2): 

- 1/2 avocado 

- 1/2 cup edamame, shelled 

- 2 carrots, shredded or spiralized 

- 4 tablespoons cilantro 

- 2 handfuls mixed greens 

- 2 large kale leaves, spines removed 

- 4 oz soba noodles 

- Sesame seeds for garnish 


For the dressing: 

- 2 tablespoons tahini 

- 2 tablespoons miso paste 

- 3 tablespoons vegetable broth 

- 3 tablespoons white wine vinegar 


Instructions:

1. Bring a large pot of water to a boil and cook the soba noodles according to the package directions (about 3 minutes). Drain, rinse with cold water, and set aside. 


2. To make the dressing, combine all ingredients in a small bowl. Mix thoroughly. 


3. Assemble the salad by tossing all ingredients in the dressing and garnishing with sesame seeds.
